Holiday Salad Dishes & Healthy Vegan Friday

Good morning! Are you doing any shopping today? I am embarrassed to admit that I already did some online shopping this morning for some of my favorite vegan skin care products, Mychelle Dermaceuticals (note: most products are vegan, a few contain beeswax so just read the ingredients before purchasing). I won’t be going to any real stores today, though, it’s too crowded!

Did you have a nice holiday yesterday? Mine was relaxed:

The most work I did was washing and chopping fruits and vegetables for my trio of salads I took to my friends’ house for dinner:

My Lemony Brown Rice & Lentil Salad was so hearty and satisfying that I did not even miss a hot dish this Thanksgiving, but it also helped that it was 75 degrees here in California yesterday:

My green salad had fresh romaine from the farmers’ market, tomato and nutritional yeast:

Here is the salad dressing recipe I used, everyone loved it and wanted to know what was in it.

Berry Walnut Dressing

6 servings

Ingredients:

1 cup frozen berries (your choice)

1/2 cup walnuts

1 clove garlic

1/4 cup white onion

1 cup apple cider vinegar

1/2 cup unsweetened non-dairy milk (I use soy milk)

4 Medjool dates, pitted

Directions:

Combine ingredients in a high-speed blender and process until smooth.

Time for dinner!

The fruit salad was the most passed-over item I brought; the allure of real sugar was just too strong for most…including me! My friends bought some Trader Joe’s coconut ice cream and, I admit, a scoop or two made it on my dessert plate with the fruit:

Overall, it was a great day and it was really fun spending time with my friends.
