High Fiber Friday: A Tasty Whole Wheat Couscous Salad (Recipe Page & Nutrition Info Included!)

It’s Friday, the weather is great, I only have 1 final exam left to study for and one of my good friends, Andrea , is getting married tomorrow.  It can’t get much better than that!  Yay for another fun wedding weekend!  For today’s High Fiber Friday post I’ve created a recipe page with nutrition info for the tasty whole wheat couscous salad I made for Easter dinner last Sunday!  It can be found under Deliciously Wholesome Sides , which is also a new page!

The key players in this salad are: whole wheat couscous, broccoli, roasted garlic (lots of it), onions, mushrooms, a couple of tasty spices, salt and pepper.

I knew this was a winner when my Dad (who normally doesn’t like anything whole grain, especially if you tell him it’s healthy) scraped his plate clean, rubbed his belly and said, “Man, was that GOOD.”

SUCCESS!

With 5g of fiber and 4g of protein per cup, this super easy salad is a  totally healthy and delicious side dish.  It’s especially great for summertime since  it can be served either at room temperature or cold.

I hope you all have stayed safe with the crazy tornadoes and such that have been tearing up the southeast this week!   Thankfully the weather here in Chapel Hill has turned for the better (and by better I mean perfect)  so I’ll be heading out for a run after work tonight.
