Hello, Lover

Perhaps you remember the episode of Sex and the City when Carrie, while window shopping (natch,) came across a pair of Manolo Blahnik’s that were so beautiful – so showstopping – that they caused her to stop dead in her tracks and utter “ Hello, Lover…”

Anyways, it was these exact words that popped into my head when I walked through the door tonight and was greeted by the mouth-watering smell of dinner…ready for me…in my crockpot!

Eeeeeek! :D

Based on the recipe here, tonight we had Cuban-Style Shredded Pork for dinner!

Cuban-Style Shredded Pork

Ingredients:

3 cloves garlic, quartered

1 Tablespoons salt

1 1/2 teaspoons dried oregano

1 1/2 teaspoons cumin

1/4 teaspoon pepper

1 teaspoon chili powder

1 bay leaf

~2 inches orange peel (I cut a strip of just the orange zest)

1 Tablespoon vinegar

1 1/2 Tablespoons orange juice

1 1/2 Tablespoons lime juice

2.5 lbs Pork loin prime roast (can use shoulder roast)

2 onions

1/2 can chicken broth

Cilantro (optional)

Directions:

1. Combine garlic through lime juice and mix together to create a marinade. Cut pork loin into large hunks and add to marinade.

2. While pork is marinating, slice 2 onions into 1/4 inch slices. Spray bottom and sides of crock-pot with non-stick spray and add onion slices. Pour chicken broth over onions.

3. Add pork and any remaining marinade on top of the onions and arrange in an even layer. 

4. Cook on low for 9-10 hours. Shred with fork, serve over rice, top with chopped cilantro and enjoy!

WOWZA! I can honestly say I’ve never tasted anything quite like this! It was a completely unfamiliar flavor and took about 5 or 6 bites to fully wrap my mind around what I was eating.

After I understood, I was soooo pleased! This shredded pork was amazing!

I know the ingredients list looks a little long, but most of this stuff I bet you have in your kitchen right now. Go ahead and look – I’ll wait! ;)

Served with chewy rice – this was an incredibly easy crock-pot dinner that I think I’ll make again! It was definitely a leap from the usual, but Ben and I were both so pleased with this new flavor experience. Rock on crock-pot!

In other news, I paid a visit to my local treadmill after work and knocked out 4 miles in 35 minutes at speeds ranging from 6.4-7.0. I finished up with a 2 minute sprint at 7.3 and then cooled down for 5 minutes at 4.0. I left GLOWING…70% because I was so happy, 30% because I was literally glowing…that gym was the hotness!!

Few things can compare to the happiness I feel when walking out of the gym following a good run :) Except maybe PUMPKIN ICE CREAM!

Oh yes, that’s right – this baby was calling my name after dinner. So I answered…and ate it.

Check out the nutritional stats on this guy…not bad for ice cream! AND it’s got less sugar than a carton of Yoplait yogurt! The sugar content in those things blows my mind.
