I can’t believe it’s already Wednesday! This week seems to be going by pretty quickly, which is just fine by me. I’m happy to get a paper, a quiz, and a presentation out of the way thank you very much .
Ooooo boy do I have a yummy muffin recipe for you! On Monday I realized that the three bananas I had left were getting pretty brown, and after looking at a bunch of recipes on the internet I decided to kind of create my own based on the ones I saw. And let me just say, what I came up with was really tasty!
Healthy Oatmeal Chocolate Chip Banana Muffins
Makes 12 regular sized muffins
These are hearty muffins made with whole wheat flour and oats. The banana and chocolate chips add a really nice and subtle sweet flavor! They are perfect for breakfast, a snack, part of a meal, whatever! And if you heat them up and top them with peanut butter, they taste even better .
2 cups whole wheat flour
1 cup quick oats
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup chocolate chips
1/4 cup unsweetened applesauce
3.5 Tbsp unsweetened vanilla almond milk
1/6 cup agave nectar
3 mashed bananas
Preheat oven to 375 degrees.
Combine all dry ingredients, except for the chocolate chips, in a bowl.
Combine wet ingredients in a separate bowl- make sure to whisk the eggs first.
Combine the wet ingredients with the dry ingredients in whichever bowl is bigger.
Stir just until it’s mixed (it will look lumpy).
Add chocolate chips and mix again.
Spoon batter into a greased regular sized muffin pan about 3/4 full.
Bake for 20-22 minutes or until a toothpick comes out of the center of a muffin clean. **Probably closer to 20 min**
Yummy in my tummy!!
Seriously guys, these are delicious!
And after enjoying one of those muffins for a class-time snack break yesterday, who wouldn’t enjoy coming home and seeing this cute little thing sleeping on your desk?
Zoey brightens my day!
Do you ever feel like your body needs more than just 1 day off from working out? Right now, that’s exactly what I think my body is trying to tell me. The last 4 days all of my workouts have felt pretty crappy. I haven’t been able to make it through a single interval workout- and both that I’ve tried are ones that I have done plenty of times in the past. My muscles have been screaming at me when I’m lifting and therefore I’ve had to lift lighter weights. And, well, I don’t feel good after a workout- I feel even more tired and I just want to sleep.
So, I’m going to take a few days off. And by that I mean I’m not going back to the gym until Saturday. For the next few days the only thing I’m going to do is stretch and maybe do some leisurely walks. I think the way I’ve been feeling during exercise is a sign that my body needs a break and some time to recover. This generally happens to me a couple of times a year and usually after a few days off I feel completely rejuvenated and my body is rearing to go!
It’s important to pay attention to the signs your body gives you! Sometimes, that’s healthier than pushing it too hard.
