And today, I just couldn’t help but share with you one more chocolate dessert recipe. Plus, we all need some cookies for Santa this time of year . So here we go:
Grain Free Chocolate Cookies
Makes about 30 cookies.
Prep time: 40 minutes.
Baking time: 15 minutes
Ingredients:
1 cup almond meal
1 cup cocoa powder
2 tsp baking powder
¼ tsp salt
2 eggs, beaten
½ cup Agave nectar
½ cup coconut oil, at room temperature
1 tsp vanilla extract
200 g (about 8 squares) dark chocolate, chopped and melted
Preparation:
Pre-heat oven to 350F.
In a small bowl, combine almond meal, cocoa powder, baking powder and salt. Mix well.
In a large bowl, combine eggs, Agave nectar, coconut oil and vanilla extract.
Mix well and stir in cooled melted chocolate.
Add almond/cocoa powder mixture and mix well.
Cover the bowl with plastic wrap and refrigerate until the dough is firm enough to roll, about 20 minutes.
Using a table spoon, measure even amounts of dough and roll in your hands to form balls.
Place on a baking sheet lined with parchment paper 1 inch apart.
Bake in the oven for 15 minutes until cookies crack.
Remove the baking sheet to a rack.
At this point, cookies might look undercooked. Just leave them on the baking sheet until they cool completely.
Gently remove cookies from the parchment paper.
Store in an airtight container at room temperature up to 1 week or freeze up to 1 month.
