Healthy Fruit Oatmeal Pancakes

As soon as I got out of bed this morning, I knew I wanted one thing and one thing only.


Pancakes! 


It's just something about Sunday morning, right?

I found this recipe in Food Network magazine a couple of months ago and ripped it out immediately. I knew that with a bit of tweaking, I could come up with a way to eat a large stack of these without the guilt. I hope you all enjoy them!

Healthy Fruit Oatmeal Pancakes

Ingredients1 cup whole wheat flour
1/2 cup rolled oats
1/4 cup crushed almonds
2 tsp baking powder
1/2 tsp cinnamon
1 banana - mashed
1 cup nonfat or soy/almond milk
1 egg
1 tsp vanilla extract
1 cup frozen berries of choice



Combine the first five ingredients in a large bowl. In a smaller bowl, combine egg, mashed banana, milk, and vanilla. Pour liquid into dry ingredients and stir until combined. Add berries and mix.
