Healthy Fish Tacos

OK, this is the last of the Mexican food posts for a while...promise.
Apparently, this is my baby beast's fault (cravings). This is a really good one, very easy to make and insanely healthy. The meat n' potatoes hubby struggled through this one and finally admitted that it was tasty (his plate was cleaned twice).
  • 1 lb white fish (flounder, cod, tilapia) WHITE FISH MOJO: high protein, low calorie
  • juice of 1-2 limes
  • 2T cilantro, chopped
  • 1T olive oil
  • 1T minced jalopenos (optional)
  • sprinkling of sea salt, black pepper, and chili powder
  • whole wheat tortillas (La Tortilla Factory's are 7g fiber and only 50 calories each!)
  1. Marinate fish in lime juice, oil, cilantro and jalopenos for 30 minutes
  2. Sprinkle both sides of fish with salt, pepper, and chili powder
  3. Cook fish in a non-stick pan on med heat, 3 min per side or until cooked through
  4. Remove fish and set aside
  5. Add marinade to the hot pan, cook down, pour over fish, and gently mix creating flakes
  6. Put out fish mixture, warmed tortillas, and all of the fixins (below) for a 'make your own taco bar'
Fixins: chopped tomato, chopped avocado, shredded lettuce or cabbage, low fat sour cream or greek yogurt, salsa.
