Healthy, Filling, Low Calorie: Trader Joe's Sweet Apple Chicken Sausage and Amyella's Ratatouille

I don't eat too much packaged food anymore and when I do I make sure to read the label carefully. I have a few criteria I won't compromise: no artificial colors, no high fructose corn syrup, no soy fillers, no aspartame. These days I try to steer away from all artificial sweeteners but I admit to occasionally consuming Splenda. I can't really claim that it's any less awful for you than aspartame, but it's a process, ya know? I don't have it very often and I'm committed to completely eliminating it from my diet very soon.

I had a large shopping list this weekend and I didn't quite have the budget for a package of free range chicken breasts. I did have the budget for Trader Joe's Sweet Apple Chicken Sausage and when I read the ingredient list I was particularly pleased. Easy, pre-portioned, antibiotic-free chicken sausage. It is absolutely delicious! I paired it with my ratatouille for lunch this week and I seriously forgot how good that pot of vegetables is when mixed like that. As a bonus, it is so low in calories that you can have a giant bowl full (which is good for someone like me, who likes to eat. A lot.) I can hardly wait for lunch time tomorrow.

The last elements of my breakfast nook arrived yesterday and tonight I get to build furniture! You have to love that about Overstock: purchase a chair and they send you lumber, fabric and directions. It's nice to have people over and ask them to sit back, relax, have some coffee. Are you comfortable? Good to hear because I BUILT THAT CHAIR WITH MY BARE HANDS.
