Healthy Chicken Taco Soup Recipe

When I was at the grocery store yesterday, shopping for the ingredients for my family’s FAVORITE winter-time soup, I literally stood in front of the tomato section, paused for a minute, and wanted to shed a little tear! I MISS my HOME-GROWN tomatoes SO terribly!!! It’s such a shame to have to buy these plastic-y looking things that claim to be tomatoes, but are nothing short of imposters in my opinion! {Hmph!} Luckily, the divine taste of the Chicken Taco Soup was still a big hit last night and we STILL got a LOT of healthy veggies in our bods!




People are always asking me for ideas on what to feed their family for dinner… although my favorite question of all… is if I feed them NORMAL things for dinner! {ha ha ha!} I love it! Yes! We definitely eat NORMAL things around here! {Mind you, I have a 9 year old son and a 7 year old daughter… but most importantly, I HATE to cook!} So I’m NOT one that is willing to spend hours in the kitchen making crazy dishes that are ultra-elite, just to make sure they are healthy! You can do that with PLENTY of “normal” recipes!


This Chicken Taco Soup recipe is one of my FAVES for many reasons!


1. It’s literally chopping and throwing things into a crockpot! No cooking required! YAY for the “I-hate-to-cook” types of people like me huh? :) Yee-haw!


2. The veggies that go into the soup are chopped up really small, so the kids have NO idea they are downing something healthy for them! {Just wait… it gets even better!}


3. Since you top the soup with tortilla chips, the kids actually feel like they are getting away with some serious “health-code” violations… and that you are okay with it! {Which you are… because they are getting green peppers, onions, and celery in their soup… which they may or may not be aware of! {wink, wink!}


4. And finally, it’s one of my faves because this recipe makes TONS! And that means leftovers for the next night which means MOM is off cooking duty again! Whoo-whoo!




1/2 cup chopped green pepper

1/2 cup chopped onion

1/2 cup chopped celery

Put the above ingredients in a crock-pot and then add:

2 cans cream of chicken soup (98% fat free)

2 cans chicken broth

3 – 4 uncooked chicken breasts

1/2 cup salsa

Cook for 5 hours on low in crock-pot. Take chicken out and shred. Put the chicken back in and warm it up just a little longer.

On top of soup, add the following garnishments:

- tortilla chips (watch portion sizes)

- tomatoes

- avocados (this is a healthy fat, but is STILL a fat… so moderation is key!)

- low fat sour cream

- low fat grated cheddar cheese


Mmmmmm… It is SO good! I have never served this to anybody who did NOT like it! And as long as you watch your portion sizes, this is a GREAT item to serve you and your family at dinner time! Hope you enjoy!
