Blueberry Balsamic Vinaigrette (serves 2)
1 tbl extra virgin olive oil
1 1/2 tsp blueberry balsamic vinegar
1/2 tsp freshly squeezed orange juice (lemon would be great, but I happened to have an orange but no lemon)
pinch of coarse salt + ground pepper
Wisk with with a fork and voila!
baby romaine + ripe pear + goat cheese + walnuts + vinaigrette = light dinner
