Hi! Good morning friends! Is everyone ready to dive into the weekend? Any fun plans? :)
So, for the past two months I have participated in the Foodie Penpal exchange put on by Lindsay (The Lean Green Bean). Lindsay makes it really easy: you fill out a short form, then you’re randomly assigned two penpals – one to send a food package to and one who sends food to you. It’s as easy as that! There’s a $15 limit and a requirement that you must send something handwritten. I’ve really enjoyed participating because 1. I like food and 2. I like meeting new people. Win-win.
This month my foodie penpal package came from Kelsay . She sent me a box full of goodies – including 2 bags of homemade cookies!
Kelsay sent chocolate chip and chocolate chip with walnut cookies. Both were delicious but I especially loved the chocolate chip walnut ones – they were gone in under 2 days.
Also in the package – some blackberry jam and dark chocolate covered espresso beans (!)

Unfortunately, the dark chocolate espresso beans did get a little melty in the mail but I popped them in the fridge and they were pretty much good to go. They actually formed one giant dark chocolate espresso conglomeration that I now have to thaw and chisel away at with a spoon when I want some – which is a good thing or I’m certain they would have already been history too!
Lastly, perhaps my favorite thing that Kelsay sent – her Italian great-grandmother’s recipes for spaghetti sauce, meatballs and pasta e fagioli. I thought it was so thoughtful of her to share her family’s recipes. My grandmother on my mom’s side, who also enjoyed to cook, was Italian too but she passed away when my mom was fairly young. I never got the chance to meet her but I would have loved to have been able to spend time in the kitchen together and learn from her so it was especially meaningful for me to have these recipes.
