I'm not the type of person who goes out on New Year's or even stays up until midnight, but I did attend a really fun party yesterday afternoon. It was a vegan potluck and I made a lentil and brown rice salad with a paprika vinaigrette. I got the recipe from the Eating Well website: http://www.eatingwell.com/recipes/rice_lentil_salad.html
The salad was really delicious! I made it the night before and then just tossed in the parsley and some lemon juice right before I left. I broke the rule about not making something for a party that you've never tried before, but it worked out just fine.
I also made my pomegranate spritzer (very complicated recipe here: Spritzer Recipe) but I think I should have labeled it or something because not that many people tried it.
Here's some more party food pics. I didn't get a photo of the dessert, but it was a raw, apple and marzipan tart that was unbelievable. I was really inspired by the food at the party and how delicious and healthy everything was. What a great way to ring in the new year as one of my ongoing goals is to eat healthful, flavorful foods that are prepared with thoughtfulness and care.
We painted these arrows and attached pieces of paper with our thoughts on what we want to get rid of and welcome in the new year and then burned them in the fireplace.
