That pretty much describes my life right now. Since I started my Anatomy and Physiology summer class on Monday, it has consumed my time. The class isn’t necessarily hard, it’s just A LOT … and I repeat A LOT … of workk, memorizing and studying – hey, I guess that’s what happens when you cram a semester worth of work into 4 weeks. O well, I’ll just have to trek through.
Dinner last night consisted of our freezer and pantry staples and some fresh veggies.

We also had an un-pictured plate of roasted asparagus, green beans, and sauteed swiss chard.
We always keep a bag of large shrimp in the freezer and canned beans in the pantry. I spent yesterday studying for my first quiz, so I didn’t have much time to prepare dinner. Knowing that we had a stocked fridge/freezer and pantry, I wasn’t worried about finding something to make.
Without any recipes in mind and no plan of action, I got to work. I threw together some shrimp sauteed with onions, garlic, herbs and wine and some herbed cannelloni beans.
To my surprise, everything was a big hit! Both dishes turned out SUPER yummy
My plate consisted of a bed of beans topped with shrimp with spinach and asparagus on the side! I love when I wing it and everything turns out great [shrimp and bean recipe will be up later this week!]
This morning started out with a sweaty 4 miler at the gym. Since my run started way before the sun showed its face, I opted to stay safe and use the treadmill. I did a simulated, 4-mile, hilly run in about 36 minutes. It felt good to get it out of the way, and it turned out being a great run. No aches or pains, felt great during AND after, and felt energized to get on with day – starting to get back into my running routine, AC Marathon … you better watch out
Post-run, I enjoyed a bowl of chocolatey oats and got ready for class – I wanted to get there a bit early to review my notes for the quiz (yes, its the third day of class and we have a quiz – wait until you hear about next week’s agenda )
1/3 cup oats, water, unsweetened almond milk, 1/2 banana, 1/2 TBSP chia seeds – with chocolate protein powder, dark cocoa, and cottage cheese mixed in – 1/4 of banana and sunflower butter on top
I grabbed my bag and snack(1/2 a PB&J and a hard boiled egg) and was on my way.
After the 4-hour class, I got home, threw together some left-overs for lunch
Leftovers: sweet potato with a small piece of poached chicken breast and 1/8 of an avocado drizzled with ~1TBSP peanut stir-fry sauce, the remainder of the beans, and a salad with left over tomato salad that was made with my very first jalapeno of the season
… took a 20 minute cat-nap on the couch (SO unlike me), and went right to my desk cove to outline today’s lecture and make note cards for the Histology lab – fun stuff
At least I get to look forward to a yummy sushi dinner tonight with Gee and our families for a long over due outing together – Can’t wait! – I’ll have a recap for ya tomorrow
