Guest Post Nick’s Breakfast Smoothie Recipe

Hello everyone! I’m Jenny’s husband Nick and I wanted to share my favorite breakfast recipe with you. Recently, I have been getting into a plant-based, whole foods way of eating . Don’t get me wrong, I love eating meat and cheese and lots of dairy. However, after reading books like The China Study by T. Colin Campbell and his son Thomas as well as Eat to Live by Joel Fuhrman, it seems as though the comprehensive independent research done on human diets has some pointed conclusions. Most of the chronic diseases of our modern era (cancer, heart disease, diabetes type 1 and 2, autoimmune diseases, etc.) are linked to the consumption of animal protein and processed foods. Even former President Clinton is on board! I am also really excited about  Forks Over Knives , a new movie coming out in May that focuses on the connection between diet and disease.

Therefore, as a vegan replacement to my usual breakfast of eggs, cheese, and toast I created an quick, healthy breakfast that makes me feel great. It’s a spin on oatmeal with blueberries and it takes only 3 minutes of preparation from start to finish.


Nick’s Breakfast Smoothie Recipe

Makes 1 serving


  • 8 oz coconut water
  • 1/2 cup rolled oats
  • 1 banana
  • 1 cup frozen blueberries
  • 2 tbsp of hemp seed
  • 2 tbsp ground flax seed



  1. Put all the ingredients in a blender and increase the speed slowly over a minute. After about a minute, turn it to near high and wait a minute more until it’s a slushy consistency.
  2. Pour the contents of the blender into a bowl and enjoy!

We’re off to Trader Joe’s so Jenny can drool over the produce section…


and then taking this energetic guy out for a much needed walk.
