Mushrooms are one of the coolest looking edible things. I thank whoever was brave enough (stupid enough?) to say, “hmm I’m gonna eat that fungus growing over there.”
I’ve been itching to grill ever since it started staying light out later & the weather warmed up. I finally got my gas tank filled, so tonight it was on!
On the menu: grilled portabella mushroom burgers!
After wiping off the mushroom caps and getting rid of the gills, I brushed a light coat of canola oil and balsamic vinegar on top. Then I seasoned them with a little black pepper and some “savory” seasoning. (Sure looks like Italian seasoning to me…)
On to a hot grill for a few minutes, and that was that! (Turkey burgers for the husband.)
Plus baked sweet potato cubes with chili powder, paprika, cinnamon, and onion powder.
I was worried the mushroom burger was going to be a bit boring, so I threw some sundried tomatoes & garlic in the food processor to make a quick spread. Along with some spicy mustard, it made for a great burger topper!
What’s your favorite thing to grill? I adore grilled fruit!! And I think all veggies taste better grilled
