Hey guys! Happy Wednesday! It feels kinda nice that we’re already midway through the week right?
Sorry for disappearing on you yesterday – I had a pretty long day at work and then came home and had a much needed skype session with Erin . Things always seem better when you can talk them out with your best friends don’t you think?
Anyway, I had intended on posting a new salad recipe last night but by the time we finished up our chat I was ready for bed. So here it is for you this morning
Grilled Peach, Arugula and Mint Salad
- 2 c arugula
- 1 medium-ripe peach, sliced
- 1 bunch fresh mint, torn
- 1 1/2 tbsp goat cheese
- 1/2 tbsp balsamic vinegar
- 6-8 medium shrimp, raw, thawed (if desired)
Directions: Coat peach slices and shrimp (if using) lightly in olive oil and place on grill. Grill for 3-5 minutes on each side, depending on grill temperature (I found the peaches took a little longer than the shrimp). In a large salad bowl arrange arugula, mint, and goat cheese. Top with peaches and shrimp and drizzle balsamic vinegar over entire salad.
I thought this was a light and refreshing end-of-summer salad. The peaches and mint add enough flavor that I didn’t really feel the need for a *dressing* so to speak and found the balsamic to be just enough. I had this salad for dinner so I added shrimp for a little extra protein but if you’re not a seafood fan or if you just wanted a lighter, side salad option you could definitely omit the shrimp and I’m sure it would still taste great.
