We did it, it’s Friday! And goodness, it became summer overnight. The high today is 95! I’m welcoming it as of now, but ask me again in July and I might give you a different answer.
After getting home from the Summercamp Fest , I decided not to go grocery shopping until this weekend. We needed to eat up some food anyway, so it was a good opportunity to do so. I had frozen chicken legs, and asparagus and lettuce about to go bad, so that’s what we threw together!
I wanted some kind of flavor with the chicken and didn’t have time for a long marinade, so I threw together some spices for a rub. I used:
Dried minced garlic
Salt and pepper
I rubbed it on the chicken and let it sit in the fridge for about half an hour, then grilled them up! We also tossed the asparagus with olive oil, salt, and pepper, and grilled those too. I tried to make a foil pocket with them, but I think it wasn’t tight enough because they took a long time to cook.
The salad consisted of local mixed greens, organic onion, local goat cheese, some dried minced garlic, and this orange vinaigrette dressing I made a while ago. This salad was amazing.
The goat cheese was “crusted” in chives!
The chicken rub turned out great – I love how the skin gets so crispy.
