Green pea pancakes with smoked salmon and goat cheese

I’m obsessed with smoked salmon. I haven’t always been a fan, I was a finicky eater as a kid, but as I’ve grown older I have learned to love it so. It always seems such a grown up thing to eat don’t you think? Very sophisticated. The current preoccupation is down to me having a little break from it because of the pregnancy. And as ever, when I can’t have something I can’t stop thinking about it.
So today I thought I’d share a recipe from the beautiful and inspiring site Canelle et Vanille.

Superfood Smoked Salmon contains a huge whack of Omega 3 fatty acids which have been found to aide in heart health, joint health, weight loss, cancer prevention and improved brain development and function. Yum and functional!
Green Peas are in season in Aus right now and while the age old practice of shelling peas has gone out of fashion I’m still a big fan and think it’s the best way to have them. Frozen are ok if getting your hands on fresh isn’t possible but if you can swing it you won’t regret the extra effort. They’ve got plenty of Folic Acid and Vit C too.
