Grain Free Pumpkin Banana Protein Pancakes

So remember all the pumpkin I bought? I mean how could we forget. It was just yesterday.

Well after taking a study break yesterday and baking a double batch of my favorite pumpkin muffins (coming soon) I had a serious, serious craving for pumpkin pancakes. I’m not sure if it was the extra sleep or rest I got yesterday or the pumpkin pancake motivation, but I did a serious workout this morning. Then I took the quickest shower of my life so I could get to making these!


Post workout meals:so important! You need those good carbs + protein. However, this is good whether you did a workout or not. These were everything I dreamed of and more. Theres nothing worse than dry, flat pancakes. These babies have volume, substance, and moisture.

Instead of maple syrup, I mashed a cold banana with a TBS of pumpkin and cinnamon. Cold bananas > room temperature bananas. You could of course use maple syrup, but I really like biting into cold banana goodness, and it adds nice sweetness + texture, especially when you leave a few banana chunks in there.


Grain Free High Protein Pumpkin Pancakes
These pancakes are paleo friendly, grain/gluten free, high in protein + fiber, sugar free, and delicious!
Serves 1
Makes 3 medium sized pancakes

In a large mixing bowl:

2 TBS coconut flour
1/2 teaspoon baking powder
pinch of salt
cinnamon + pumpkin pie spice to taste
1 packet of stevia (or sweetener of choice) optional

Mix all the dry ingredients together. Then add:

5 egg whites (or you can do 1 egg, a few whites- whatever you like)
3 TBS canned pumpkin

Whisk all ingredients until lumps are gone. Batter will be on the thicker side which is what you want! Cook on medium heat in a pan coated in coconut oil (coconut oil = amazing healthy fats + great flavor. A little goes a long way!)

Make sure they cook well before you flip, or else you will end up with a little mess :)

Top with mashed banana mixed with 1 TBS pumpkin and spices.

Heres the nutritional info for what I did (5 egg whites, 1 medium banana, coconut flour, 1 teaspoon coconut oil, 1/4 cup pumpkin total)

Hellooo fiber, protein, and good carbs :)

And in case you were wondering, I still get attacked when I go outside to take pictures.
