And french toast. And eggs. And coffee + family time + relaxing + NOT being in class which is rare in my schedule. So that’s why I take full advantage of my days off when I get them!
Gluten/Grain Free Chocolate Protein Pancakes with raspberry chia jam inspired by Kasey
6 large egg whites
1 serving good quality chocolate protein powder (I used teras organic whey)
1-2 TBS raw cacao powder (or whatever cocoa powder you have on hand)
1/2 teaspoon baking powder
sweetener of choice (optional- I didn’t use any- but add a packet of stevia if you wish)
pinch of salt
coconut oil for the pan
~ 1/2 cup frozen or fresh raspberries
2 TBS chia seeds
If using frozen raspberries, thaw in microwave or on stove top. Mash and add chia seeds. Let it sit while preparing the pancakes. Add a splash of water if needed.
Mix the protein powder + baking powder + cacao/cocoa + salt in a small bowl. In a separate bowl, add your egg whites. Whisk the dry ingredients slowly into the eggs. Make one large or a few multiple pancakes on medium heat – pan prepped with coconut oil. Top with raspberry chia jam and enjoy!
Probably the easiest “recipe”, ever.
You can definitely play with the ingredients and use a mix of whole eggs and egg whites, and coconut flour if you don’t want to use protein powder. Use 2TBS of coconut flour, and some almond or coconut milk to thin. [and to any new readers- I'm definitely a huge fan of egg yolks, but I save them for later when I have them scrambled, poached, or over-easy to enjoy the taste of the yolk. yes, I eat eggs daily!]
This is the one breakfast that sits in my stomach well enough that I can exercise an hour later. I have to wait at least 3 hours if I eat oats and exercise later on, especially when it comes to cardio and jumping around. I just get horrible cramps and pain, bloating, and I don’t really feel the need to taste breakfast again 3 hours later….yeah. Not fun!

Very similar to my cinnamon vanilla protein pancakes , except for the obvious use of chocolate and raspberry topping!
