Grain-Free Banana Protein Muffins

(See, I do eat fruit.. just not a ton!)

Makes 10 muffins @ 63 calories, 7.5 grams of protein, 4.5 net carbs, 1 gram of fat each


Ingredients:

  • 2 large, brown bananas
  • 2 scoops (64 grams) whey protein powder- your choice of flavor
  • 2/3 cup egg substitute
  • 32 grams (1/4 cup) ground flaxseed
  • 1/2 tsp NuNaturals No Carb Blend Stevia
  • 1/2 tsp baking powder
  • 1/2 tsp xanthan gum (pretty sure this is optional- I didn’t notice a difference in texture- I was experimenting)

Directions:

  1. Preheat oven to 350 degrees. Spray a muffin tin with nonstick baking spray.
  2. Mix all ingredients in a large bowl.
  3. Pour into muffin tins, bake for about 20 minutes, or until a toothpick or knife inserted into the center comes out clean.
