Good eats

Finally it is here!!!

My weekend gets to start tonight due to the fact my friday class sometimes has online lectures because my professor is pregnant. Luckily I was able to do the online lecture today after all my classes to get it out of the way and actually enjoy my friday.

Today was a busy busy day. I literally have been doing school work or school oriented things from 630 this morning until about 430 this afternoon when I took a break to get a hair cut and then proceeded to start doing school work again to finish everything up.

My agenda tomorrow includes me going home :) and working with my internship from 12:00 p.m. until about 4:00 p.m. I’m nervous but excited.

The one new exciting thing I learned today that I thought was extremely interesting was about people!

the 3 hardest things for an individual to do in their lifetime:

  1. Permanent weight loss
  2. Smoking cessation
  3. Learning to swim as an adult

Crazy isn’t it. I mean I knew that weight loss was extremely hard and smoking seems to be understandable but swimming. I thought that was very intriguing.

Onto my lunch/snacks:

Hi-Energy trail mix from the fresh marketP1010581 Honey Crisp apples are in SEASON!!!! I love these little boogers more than anything but they are so darn expensive. Here is my 2.00 apple. Not pictured was some random nibbles of food and a kiwi P1010582 Dinner time: I was craving a mixture of food tonight so I made a few wonderful delights. This is a salad with tomato, zucchini, black beans and corn and hot sauce. I also used half a tortilla and made a mini ques. The concoction contained some corn and black beans, half a laughing cow wedge, lettuce, tomato, zucchini, and you guessed it more hot sauce! P1010584 Here is some homade salsa my parents made over the summer from the tomatoes in our garden ( we had an overflow) P1010587 Last but definatley not least my leftover cauliflower garlic smash with some sauted onion, caper, zucchini, and artichoke, and a meatless meatball. WOW! I wish I had discovered this earlier because honestly I could eat this for every meal. It is that good. I popped this guy into the microwave for about a minute and gobbled all of it.

I just got finished watching PROZAC NATION for school and during the movie although a little crazy I still wanted something more. I made myself a make shift cookie again. I put in a bowl a handful of oats not much, sprinkles of egg white, soy milk, cinnamon, brown sugar, raisins, and a tad bit of pb mixed all together put in microwave for 30 seconds and magically you have a healthy oat cookie. Unfortunatley I do not have a picture because I get so excited I always eat it all up. Next time which will probably be very soon a picture will be produced.
