Good Eats & Good Deals ...

Posted Oct 02 2009 3:08pm

Hi!

I hope you all enjoyed the fitness Q & A’ s this morning! I actually learned a lot from it!

Last night I actually slept well! My arm didn’t itch me all night which helped me sleep a lot better. And this morning I was hungry!

I still have a bunch of Cinnamon Raisin bread from The Great Harvest that I don’t want to get old so I decided to use it up this morning and make french toast. All I did was soak two slices of the bread in a mixture of 1/3 cup pure liquid egg whites, 1 tsp cinnamon, and 1 tsp vanilla extract. Then I put them on the griddler and flipped after about 5 minutes. I topped the egg white french toast with 2 tsp peanut butter and had sf maple syrup for dipping.

Yum!

To answer some of your guy’s question about cellulits and yesterday’s fiasco- I got a shot intramuscular into my butt of a high dosage of antibiotics. Plus now I have to take antibiotics 4 times a day for 10 days. That should clear it up! The swelling and redness has already improved from the shot so it should clear up in a couple days. My butt is still sore but not as bad as yesterday! :D

For lunch I decided on a salad to get in some greens. Today’s mixture contained:

  • Mixed greens
  • 1/2 block bbq tofu (marinated in homemadebbqsauce, baked at 400 degrees for 45 minutes)
  • Roasted kabocha squash
  • Sliced cucumber
  • 2 tbsp roasted pumpkin seeds
  • Red wine vinegar

It’s a good thing my mom is obsessed with kabocha squash too or else I’d probably devour the entire squash in one sitting!

After lunch my mom, sister, and I headed out for some retail therapy. We went to Walgreens and I bought some Physicians Formula make-up that has a mail in rebate so I’ll end up getting it for free! Love those. Then we headed over to Marshalls and spent forever there- I ended up with some American Eagle jeans that were only $16, a new checkbook/wallet for $7, an American Eagle tank top for $5, and some salon brand pumpkin shampoo for $10!

When we came home I had a small snack since dinner was around the corner. I mixed 1/4 cup Fage 0% with 1/4 cup pure pumpkin, cinnamon, vanilla stevia, and 2 small chopped fresh figs.

And for dinner I made an omelet with a new omelet maker that my mom bought today. I just poured 1/2 cup Egg Beaters, fresh spinach, and fresh green chili into the omelet maker. It took about 5 minutes and then it was done! I topped it with a Light Laughing Cow cheese wedge. And a yam with cinnamon, ginger, and 1 tbsp Naturally More peanut butter on the side:

Normally I can’t tell the difference between yams and sweet potatoes but today’s yam didn’t taste as good as normal. Oh well!

Well I’m off to go write another cover letter- I’m applying at the Urgent Care clinic I went to yesterday! lol.

See ya later!
