Golden Anti-Inflammatory Beet Soup

photo I’m currently working with a couple clients who suffered from severe Irritable Bowel Syndrome (IBS) and both are reaping wonderful results by blending their produce: no more loose stools, bloating, gas, abdominal pain and discomfort.

Each arrived telling me that they can’t eat produce. I told them they CAN eat, enjoy and benefit from fruits and veggies – they simply have to alter the texture.

Meanwhile, I’ve dealt with my own digestive challenges and decided I need to take my own advice and get reacquainted with my blender based on the incredible outcomes my clients have reported.

I was hungry for beets and in the mood for fall, so I came up with this golden anti-inflammatory beet soup. It has a beautiful autumn shade, and a more subtle beet taste than the red variety.

Beets are a source of phytonutrients called betalains, which provide antioxidant, anti-inflammatory and detoxification support.
