Gluten-Free Camping Trip

Today IS a happy Monday.  We are leaving on a four day camping escape.  Funny, I used the word “escape”.  Did I mention I got a new car?

Pretty sweet ride right?!  I USED to drive a Scion xB.  It was my little toaster, and I loved it.  But it’s time for me to move on and we needed more space for the pups. We are so excited to take our first road trip in this thing!

On this trip I want to take a shot at gluten-free (GF) camping.  I realized going into it that it might be somewhat of a challenge.  Especially, being that beyond my education and counseling experience I am new to the gluten-free world.  But me and the fireman were up for it.  With your typical, burgers, chips, hotdogs, sandwich’s, etc. off the record this is what we packed…

  • Chinese Chicken Salad (with rice noodles instead of ramen and no seasoning packet)
  • GF chicken sausages
  • Corn tortilla chips
  • Pico de gallo
  • Fresh fruit (strawberries, plums, and apricots)
  • GF Oatmeal
  • Almond Crisps
  • Vegetarian (and GF) Chilli
  • Veggies (carrots and peppers) and hummus

Sounds delicious doesn’t it?  The best part is this might be the first camping trip I take, that I don’t come back 5 lbs. heavier than when I left.

Well, we’re all packed and ready to go.  Until we return I will “unplugged” as they say!  I am looking forward to the downtime.  Catch back with you all soon.  In the meantime, keep chewin’!
