I don’t eat pork often.

Make that- I eat pork like once a year and that’s about it.

I did make pork for dinner back in October though because I really wanted to try my hand at making pork chops.

Well, I recently decided that I need more variety in my diet, and so, I made pork chops for the second time in my life last week (pretty much following this recipe exactly).


I coated Michael’s pork chop in whole wheat flour, but I didn’t flour mine because I wanted to keep it gluten-free.

Instead of regular butter, I used Earth Balance- which Michael and I both like a lot.  I love how it is popping up in more mainstream stores now too like Walmart and Target.

This recipe is definitely worth passing along to all of you because the meal was quick, easy, and flavorful.  Given my track record with pork, I’ll probably make it again in another six months. ;)


I didn’t have the time or stamina to make my homemade Thanksgiving Cinnamon Applesauce (we had to settle for the jarred kind from Trader Joe’s), but I am sure that it would go perfectly with this dish.

If you haven’t made this applesauce yet, I highly suggest it.  I’ve been making it for years now, and it is always a winner.

By the way, I served Michael’s pork chop along with some mashed potatoes as well.  Since I was lacking greens that day, I went with a salad (although I confess that I did lick the pot clean when I was transferring the leftover potatoes to a container…).

On a completely random and unrelated note, we watched the original version of Footloose on Sunday night because neither of us had ever seen it previously.  I really enjoyed it (despite the fact that it was completely cheesy) and loved seeing a vintage Sarah Jessica Parker.



She was so cute!

It makes me happy when I get to see a cult-classic that everyone else on the planet has seen already.  After all, it’s always nice to feel as though you belong with the rest of the human race.

The only downside to watching this movie is having the theme song stuck in your head for days.  Not cool, especially when you sometimes don’t realize that you’re singing out loud in front of strangers.  (Or does that only happen to me?)

Are there any classic or popular movies that you’ve never seen?  Believe it or not, I have never seen any of the Twilight movies.  I just don’t have any interest in vampires, but I’m OK with that one.
