Glorious Muffins

I have been dying to make squirrellys muffins ever since she posted them. Its a rainy day here in NY and all the ingredients are on hand so I went for it

Pumpkin Millet Muffins

Chocolate Chip Espresso Muffins

Holy. Yum.

The only changes I made from the original recipe in the pumpkin were:

- use 1 cup milk with 1 TBS white vinegar (didn’t have buttermilk)

- pumpkin pie spice instead of individual spices, and a generous serving of cinnamon

- got 12 huge muffins instead of 9

These are soo moist and pumpkiny. I think they are officially my favorite pumpkin muffin recipe. The millet definitely adds an amazing chew/crunch factor, so I would definitely not leave that out! Click here for original recipe :)

The changes in the espresso muffins:

- same deal with the milk (1TBS white vinegar added to 1cup milk)

- added coffee extract

-used 2 TBS instant espresso coffee grinds

-mine cooked in about 20-25 min as opposed to 30-35, so just keep a close eye, and again I ended up getting 12 huge muffins instead of 9
