I really need to get back in the swing of things with blogging. I forgot how much dedication it takes as well as the responsibility of taking pictures.
I honestly am one of the worst picture takers I know but I will continue to get better again.
These past few days I have been busy with my best friends that are only in town for 2 weeks before they leave me for the summer.
Wednesday night we attended dollar corona night and visited with all of our high school friends. I managed to consume 2 corona’s before they ran out and then moved onto a wonderful pitcher of shock top ( my favorite).
Before hitting the bar my mom and I made burgers at home. I had a turkey burger on rye bread and my mom had a regular burger. On the side we had some baked beans. It was very satisfying
Thursday morning was an early one due to my inability to sleep but I ended up having a nice day.
I took Bryan to the airport to catch his flight to San Diego CA to visit friends and then headed to Virginia Beach to look at the hotel we booked for sand soccer in a few weekends. I’m super jealous of him going to San Diego enjoying all the amazing food and beautiful weather plus he did a great job rubbing it in about going on a run through San Diego ( I can only imagine).
Anyways, I got home from all that and was starving and hung over but was determined to not spend money and eat semi-healthy which introduced this awesome sandwich I made.
Honestly it tasted so good way better than fried food and way more satisfying.
I scrambled some egg whites with spinach, tomatoes, and cottage cheese. I then toasted two pieces of rye bread placed a piece of cheese on one side, added some sliced turkey and then topped it with the steaming hot eggs. Very good and way healthier !
Thursday afternoon I went over to Whitney’s house to give her a work out since I’m not working out. I created a nice little 40 minute circuit for her which she felt very satisfied with.
For dinner I made myself some quesidillas that knocked my socks off.
I sauteed onions and peppers to begin with. Then cut a tortilla in half. Added some pepper jack cheese, chopped spinach, black beans, grilled chicken, the sauteed blend and topped it with the other tortilla half. Again, another score for a meal.

Friday morning I woke up to some dunkin donuts cinnamon spice coffee and a 4 mile walk with Whitney. It felt so good to get out and walk outside.
I have been feeling a little down in the dumps lately and very sluggish due to be inability to sleep as well as other things so Friday consisted of a lot of reading, running errands, and then in the afternoon moving out of my apartment.
Unfortunately no pictures were taken Friday but don’t worry you didn’t miss anything.
Onward to this slightly cloudy Saturday morning I drank my coffee and read the paper and have been reading blogs for awhile now. I then made myself a colorful breakfast to make up for my lack of fruits and vegetables yesterday.
Breakfast included spinach, tomatoes, and egg whites with some strawberries, cottage cheese, cantaloupe and half an orange. I hope everyone has a fun Saturday and enjoys the three day weekend.
I am going over to Whitney’s house today for a memorial day cookout!! I can’t wait to spend the whole day with my best.
