Well hello everyone and a very happy WIAW to you! I have to get this WIAW posted ASAP because I’m heading out to party with Miss Emmy who’s getting married on Saturday!
Surprisingly she did not lose her finger to gangrene despite the oh so wise duct tape bandage!
Now on to WIAW fun!
This week I am down in D.C. staycationing with my family and starting full-on training for one or more fall triathlons. Fortunately, the two go very well together because my family loves to cook and my now especially hunger belly needs to be fed! Post 30 mile Bike Ride Breakfast: Smoked Herring Pita Sandwich with Pickles, Mustard, Tomatoes, Cheddar Cheese and Mesclun Greens
Typically I don’t do savory breakfasts but after my long and sweaty ride, I was craving salt and this fit the bill.
Dinner of Curry Roasted Eggplant Wraps and Sweet Corn on the Cob with Goat Butter, Salt, and Pepper
The curry roasted eggplant is my new super simple creation.
Preheat your oven to 350 degrees
Slice the eggplant into 1/2 thick planks.
Drizzle with olive oil and rub with salt, pepper, and curry powder.
Place eggplant planks on a pan and bake in the oven for about 30 minutes or until tender.
So delicious served with bread and hummus. Mmm mmm!
