Get Better Blueberry Banana Bread

It’s raining here in the great North West. What else is new? Yesterday, I stared longingly at my bike, just wishing the rain would stop so that I could go for a spin. Sigh…

Instead, I will bake (totally rational, I know!). I had a major almond butter cookie recipe flop the other day, so I have been hesitant to try again. Thus, I wanted to tweak my Paleo Banana Bread recipe a little bit.  

My amazing friend Connie has been battling thyroid cancer and just found out yesterday that she will not be requiring any more treatment!!! Hurray!! However, in order to find that out, the doctors had to take her off of her thryroid meds which caused her to get really sick. Poor thing! She is also on a strict, no fun iodine free diet which is stinky. Connie is a counselor who is amazing at helping and loving others. She has been working so hard to help people while she has been hurting herself. This woman is amazing!!

So, I am going to take her some upgraded banana bread to help make her smile on this rainy day!

Get Better Blueberry Banana Bread

(I like to use 2 mini loaf pans so it rises better)

Ingredients:

3 eggs, separated

3 packets Truvia/Stevia

2 Tablespoons olive/coconut oil

2 ripe, mashed bananas

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

2 cups ground almond flour

1 cup blueberries

1/3 cup chopped walnuts

Directions:

- Pre-heat the oven to 350F. Spray loaf pan.  I used two mini loaf pans.
- Cream the egg yolks and sweetener in a large bowl until light and fluffy.
- Add the oil, vanilla, mashed banana, cinnamon, baking soda, baking powder and almond flour and combine well.
- In a separate bowl, beat the egg whites until stiff peaks form. This part is very important for fluffy bread.
- Fold egg whites into the banana mixture to pull it away from the sides before gradually folding the rest of the egg whites into the mixture.
- Pour the banana mixture into your desired pan (you could also use muffin tins)
- Place in the oven for 30-40 min. if using small loaf pan. If you use one big one, up the time to 40-45 min.

I had a little leftover, so I made a little heart shaped banana bread! It was tasty!!
