Garlic Fries and BBQ Pork Sandwich

Posted Feb 20 2010 5:50am

I have been getting a lot of comments about how I make my fries. They are really really simple, but really really delicious. I actually made them last night for dinner so I will go ahead and post the recipe.

Garlic Fries

  • 4 medium thin-skinned white potatoes
  • 3 to 4 tablespoons extra-virgin olive oil
  • 1 dash of ground thyme
  • 1 teaspoon sweet paprika
  • 1 teaspoon garlic powder
  • Coarse salt and black pepper

  1. Preheat oven to 450 degrees F.
  2. Cut potatoes into wedges. In a large bowl, combine oil, thyme, paprika, and garlic powder. Toss potatoes around in the bowl and spread out in a single layer on a nonstick cookie sheet. Season wedges with salt and pepper and roast for 20 minutes, turning once.
  3. You can basically use whatever seasonings you like. I made these up and I really like the combination so I stuck with it.

BBQ Pork Sandwich

  • Leftover Pork Tenderloin
  • BBQ Sauce
  • Whole wheat (or regular) buns

  1. Preheat Oven. Combine BBQ Sauce and pork tenderloin in an oven safe dish. Heat for a few minutes. You could probably do it in the microwave, but I was afraid the meat would dry out.
  2. Assemble sandwiches.

Good dinner before my long run :)
