We bleed Big Blue in our family. We all cried when they won four years ago. True story. I broke a chair when they lost in the playoffs the next year. Also a true story.
But what would a great Super Bowl be without great food???
At face value, Super Bowl isn’t exactly vegan friendly (NACHOS. BUFFALO WINGS. CHILI.)
But here’s a peek at what I’m serving up tonight:
NACHOS. BUFFALO WINGS. CHILI.
Omnis who say it ain’t so? Read it and weep.
The main event:
A variation on my Pumpkin Veggie Chili, with AMAZING cornbread- crispy on the outside, moist on the inside, but totally light… Mmmmmm.
Cornbread Muffins
1 cup whole wheat flour
1 cup yellow cornmeal
1 tsp stevia
1 teaspoon salt
2 tsp baking powder
1 tsp baking soda
2 tbsp flax seed soaked in 6 tbsp water
1 cup almond milk
3 tbsp unsweetened applesauce
1 tbsp lemon juice
Mix all dry ingredients in a bowl, and wet ingredients in a separate bowl. Combine and whisk until smooth. Pour into greased muffin tins and bake for about 10 min. at 400 degrees.
Also on the menu? Gardein buffalo wings (similar to these), Zucchini nachos (!), my family famous Mexican layer dip, and I’m sure lots of other things. And hopefully a win.
