fruit of the season cake

I truly believe that this cake can be made with any fruit or vegetable there is on the market in the moment, like figs, carrots, apples, plums… Today I experimented with figs and it turned out great! So, here is what to do…

  • 1 cup whole wheat flour
  • 1/2 cup grounded nuts (I used almonds)
  • 1 tsp baking powder
  • 2 eggs
  • 3 tbsp coconut oil
  • 1 big orange, juiced
  • 3-4 tbsp honey
  • 4 big figs, chopped

Mix the flour, grounded nuts and the baking powder in a bowl. Beat the eggs and add the coconut oil and the orange juice. Mix the 2 and add the honey and the chopped figs. Blend everything and pour into a small baking pan. Bake for 40-50 minutes at 200°C. Let it cool and eat garnished with fresh figs & honey :)
