Frosted Oatmeal Raisin Cookie Muffin

Thought I would share a quick recipe with you tonight. Lots on my mind...just have to take the time to get it written down! I feel like I am all over the map right now, you ever feel like that?
Anyways...Here's the quick and easy microwave muffin of the day!

1. Ingredients "Group Shot"!


2. Dry ingredients and wet ingredients.


3. Everybody into the pool!


4. After 5 minutes in the microwave.


5. Topped off with some protein frosting!


6. Look at the size of this baby!


7. And full of yummy goodness!


So good, so filling!

Here's the recipe: 

Frosted Oatmeal Raisin Cookie Muffin
    2 Tbs. Powdered Egg Whites (or 3 Egg Whites)
    6 Tbs. Warm Water (Omit if not using powdered)
    1 tsp. Vanilla
    2 Tbs. Flax
    milk (or your milk of choice)
    3 Tbs. Unsweetened Applesauce
    2 Tbs. Rolled Oats
    1 Tbs. Brown Rice Flour
    1/2 tsp. Baking Powder
    1 packet Sweet leaf sweetener
    1 Dried Plum, snipped or chopped (You may use raisins, nutritional values will change slightly)

    Protein 'Frosting'
    1/2 scoop Vanilla Protein Powder
    1 tsp. Fat free/Sugar Free Jello mix, dry
    Enough liquid to create proper consistency
Mix wet and dry ingredients in separate bowls.
Combine all the ingredients and pour into a large microwave safe mug. (I use a 2-cup Pyrex measuring cup)
Microwave for about 5 minutes.
Prepare frosting while it cooks.
Remove from microwave, invert onto serving plate. Allow to cool just enough to frost and enjoy!
