Friday Five

This has been a wonderful week!  I was off for spring break and I got to relax and spend time catching up on things at home.  I still feel like I have so many more things I want to blog and share with you (like our 5 course dinner at Ruth's Chris last night) so keep reading!

Here are 5 things that are totally rocking my world this week
1. RunDisney's Expedition Everest
Saturday night is the 6th Expedition Everest Challenge.  I will be announcing and Kyle and his sister Kelsey will be running.  I'm a little bit jealous they get to run, but I look forward to seeing them and all the runners take on the course.  If you're there look for Kyle and Kels rocking their " Beast Mode " shirts! It's also a partner race.  Kelsey runs a 20 minute 5k and Kyle runs a 25 minute 5k.  I'm sure there will be some fun conversations along the course! Here's last year's recap post .

2. Risotto
I made risotto.  And it was good!

Score 2 iron chef points for me!  I have been wanting to try and make risotto for a while and with the week off I committed to do it.  I followed Iowa Girl Eats shrimp and asparagus risotto recipe.  It was very easy, but did require constant attention.  I like how easily the shrimp cooked in the risotto and the creamy flavor from the parmesan.  Wanna come over for dinner?
3. Lemon Blueberry Bars
If you want me to make dinner then you need to get Alexis to bring dessert. Alexis is my friend, neighbor, and fellow FitFluential blogger and she gave me the most amazing dessert to try last week.  You. Must. Make. These.
They are sweet with a lemony kick that's just perfect for summer. The full recipe is on her blog FitPossible .

4. Olivenol
Sometimes my body aches.  I have a long history of hip and neck issues so I am in a constant battle with inflammation.  This Tuesday I had the chance to watch our RunDisney nutritionist, Tara Gidus, host 3 segments for the Daily Buzz.  One was on Olivenol , which is a pill derived from the olive pulp left after making olive oil.
It's amazingly high in antioxidants and helps reduce inflammation and boost immune health.  I picked up a box to try and am looking forward to sharing the results in a few weeks.

5. Garmin Addict
The ill fated Lake Minneola Half came back with some very revealing race photos.  I am addicted to my Garmin.  Every single picture of me at the finish has me staring at my Garmin.
Now I credit my Garmin with making me a faster, more aware runner and I fully admit my addiction.  And now I have the terrible race photos to prove it.  I also wish I could share my friend Megan's pics, because sadly they are awful.  Terribly, hilariously, awful.  But I love her so I won't.  :)
