It has been a long week but I had a great field trip out with my class today to an environmental study center. We had a great time taking a nature walk and doing some pond dipping for little creatures!
Tonight I made a quick, yet super healthy dinner before going to visit my MIL.
We had a few veggies in the fridge that needed using up! I sautéed them in a skillet with a spray of evoo.
I used this spaghetti:
…and boiled it as per the instructions on the box. 8-12 minutes? Something like that.
Just as I was about to mix in the chickpeas and spaghetti sauce my camera battery died. I hate it when that happens!!
But I did manage to get a semi-ok photo of the end result.
It’s a bit blurry I was so proud of this dinner because it took me all of 10 minutes to make and it was so delicious! I garnished the plate (and meal!) with dried basil and dried oregano. Two of my favourite herbs.
It tasted unbelievably good! Such a nice vegetarian meal as well – and chickpeas are much cheaper than meat anyways. I love them!
I saw some chickpea burgers on Meghann’s blog the other day that I wouldn’t mind trying sometime – what’s your favourite thing to do with them?
I bought a whole case of 12 cans at a local supermarket for only $4!! Plus a jug of tahini. Any idea what I might be doing with them?
I’ve got a kick butt workout planned for tomorrow. I see a good run and some weights in my future! Enjoy the rest of your Friday!
