With its aromatic and inviting flavor basil is a great accompaniment to many dishes. Fresh basil is easily found year round in most markets. the shelf life can be extended by wrapping damp paper towels around the stems and stored in a Ziploc baggy in the fridge.
To make Fresh Pesto:
2 c. fresh basil leaves
1/3 c. pine nuts 2 cloves fresh peeled garlic 1/2 c. fresh grated Parmesan cheese 1/2 c. extra virgin olive oil Pinch of salt and black pepper
Add all above to a food processor and pulse for a few momnets to blend...add more olive oil if too thick. Store in the fridge for up to one week in a covered glass container.
Enjoy fresh pesto with vegetables, pasta, on salads, or as a topping for chicken and fish.
