From my post yesterday about our time at the beach and pictures and my 10 Questions , thanks to those of you who played along and told me a little something special about yourself or answered any of the questions.
Tons of you mentioned that you loved the movie A Walk to Remember. As I had said yesterday, I was in the movie . Because I had so many people ask me about it, here's a little more info....I was the girl in the poster that Mandy Moore's head was super-imposed on in the cafeteria scene where Landon "defends" her. That's my body on the poster.
I was living in Wilmington, NC at the time when they were filming the movie (10 years ago) and was cast for the part. I went and auditioned for the part, they called me later that day to say that I got the part, and told me to be on the set the next morning.
The next day, I spent about a half day being photographed and videoed and was paid quite well for my time that day, and became SAG (Screen Actor's Guild) card eligible.
All in all, a super fun day! So that's a little more trivia about me.
And if anyone can tell me how to get a video off the internet and downloaded to my computer, I can upload the video to my blog.
I know it's cold where some of you are, has anyone made any soup or chili lately? Is that a food you can't get enough of?
Here's one to try if you're looking for a recipe. You can do it in a Crock Pot or on the stovetop. And no sauteeing first, then adding this or that, is required. It's one pot and just dump everything in all at once.

1. When you're on vacation, do you cook? Do you eat out? Do you try to stay some place where you at least have the option to cook, i.e. there's kitchen access?
I couldn't imagine being on a long-ish vacation and not having access to a kitchen. Between food allergies , having a small child who I swear needs to eat about 17 times a day, the expense of dining out, and the less-than-healthy options in a restaurant or options that I would want to eat, I would be miserable without being able to cook for us. And in debt! We eat out very rarely at home, no reason to start here is the way I look at it.
2. Holiday Baking anyone? What are your fave recipes or things you just have to make?
I really wasn't going to make anything but since I have a family and hungry neighbors to help me with the sugarfest I created, I figured, why not!
3. What's the Latest Food you can't get enough of?
I can't get enough Rice Krispie" Treats with Vegan Chocolate Frosting as I mentioned and made.
4. Do you crave "healthy" foods? Or could you live on desserts alone?
(Healthy is such a relative term that I put it in quotes but I think we can all agree than carrots are healthier than Twinkies, that apples are healthier than Butterfinger bars, that broccoli is better for you than Cool Whip. Ok now that we have "healthy" cleared up...)
I love my green bowls and eat an edamame salad almost every day. Or some sort of green/raw/fresh salad or food.
I joke about desserts, but honestly, 90% of my diet is fresh, wholesome, "real" food, green food, fruits, veggies, and I like it that way. I actually couldn't imagine it any other way. I couldn't get enough of eating this way.
I've posted before that I don't eat all the desserts I make .
