Wow, so I hope you all don’t mind my random posting schedule. I posted twice on Monday and then all day yesterday and today was radio silence. That’s what comes with an unpredictable job.
Anyway, a lot is going on over here and I have been working on an important post for you. I am taking my time because it is something really important to me and I want to make sure I don’t miss anything that’s going on in my head.
I wish I had some workouts to post, but since I didn’t have one today or yesterday, you’re just going to have to see food photos.
My day was brightened today when I walked into the kitchen at work and saw cups of granola. What? Free granola? I asked one of the girls that sits nearby and she said that it was leftover from a “healthy” birthday breakfast party. They had yogurt with pumpkin granola. PUMPKIN GRANOLA, you say? I just came to get my pumpkin yogurt out of the fridge. Who is watching over me?
I saw Brittany’s recipe this morning and couldn’t help myself but to make it for my work breakfast (aka breakfast #2).
The next 9 hours were a blur. Clearly, my interest in food is stronger than my interest for work. I mean, on a rainy, dreary day like this, it’s hard to concentrate! But food? Put it in front of me and I have your full attention.
Dinner consisted of the pizza I made this weekend using Trader Joe’s whole wheat pizza dough, homemade tomato sauce, fresh mutz, and basil. The only thing I will do different next time is bake the crust before adding the toppings, it got a little soggy!
I paired it with some steamed spinach.
It was super easy! No pots necessary. I found these zip ‘n steam bags hiding in my drawer that I haven’t used in so long. I put the fresh spinach in the bag with some garlic powder and nuked it for about 2 minutes.
Everything was topped with parm cheese, clearly.
Dessert was sad. How can dessert be sad? When it’s the last piece of pumpkin pecan bread .
Alongside some applesauce mixed with cinnamon. I will definitely be making this break again, ASAP.
Now I’m going to relax and watch Modern Family. Love that show!
