Dinner last night-miso salmon and sliced veggies...yum! Heat up 1/2 to 1 cup of white miso with 1/3 C of rice vinegar and a tablespoon of brown sugar. Let it cool then marinate 4 skinless salmon fillets for about 1-2 hours. Meanwhile combine 1 cup of coriander leaves, 1/4 c of lime juice, 1 small red chilli, 1 garlic clove 1 tbls of ginger and 2 tbls flaxseed oil-best to mix in a blender-I just mixed mine manually so it was as saucy. Cook the salmon either in a pan or grilled-serve with sauce over brown rice (I mixed in some white rice cause I just like a blend), and sliced cool veg on the side. Yummy and healthy! Your fat is mainly from the salmon-about 16 g....and approximately 57g of protein!
