Is there anything more perfect than rich chocolate mousse? Well, sure. But it definitely ranks pretty high up there.

And actually, I can think of one thing better than rich chocolate mousse… frozen rich chocolate mousse. It’s like chocolate ice cream on crack.

Festive red makes it perfect for V-Day. Enjoy the creamy, fluffy goodness.

Vegan Red Velvet Chocolate Mousse

3 large beets, cooked

2 tsp vanilla extract

½ package lite firm tofu

1 cup almond milk

2 heaping tbsp cocoa powder

1 tbsp stevia, or 2 tbsp sugar or agave

pinch of guar gum (optional)

Puree all ingredients in a blender until smooth and creamy. Remove into serving dishes (2 large servings) and let chill in fridge or freezer, if you want frozen mousse.
