Sundays is a cooking night in our house. Since I teach late during the week, I attempt to make dinner Sunday with enough leftovers for Monday and Tuesday. Chicken was the protein choice for the night and I wanted to change it up from the usual recipes. I took and the slow-cooker and got to recipe creating!
Slow-Cooker Chicken Recipe Makes 6 Servings
Ingredients2 packages of boneless skinless chicken 1 1/2 cups Chicken Stock (reduced sodium) 1/2 cup White Cooking Wine 1 1/2 tbsp Extra Virgin Olive Oil 2 tsp Thyme 2 tsp Oregano 4 cloves chopped Garlic 1 Shallot chopped
DirectionsAdd all ingredients to slow-cooker. Turn on high heat for 3 hours and let the wonderful smells takeover your home!
When the chicken is done it will be very tender and tasty. For dinner Sunday we ate the chicken with sauteed kale, butternut squash, and Farro. Monday I used the chicken as my protein in a salad for lunch. This would also be great chicken for chicken salad.
