Billy made a delicious fish dish when we were at the lakehouse last weekend. We often eat different meals, but we both love fish and vegetables.
He started with enough cod fillet for at least 4 people.
He quickly pan-seared the fillets in olive oil, and then added the fish to a spicy diced tomato sauce in a baking dish. Added more tomatoes on top.
Topped that with cilantro and jalapenos. And then the zucchini and mushrooms.
Baked for about 20 minutes at 400 degrees. Served with black beans and avocado. And some random sweet potatoes just because.
Easy dinner with lots of leftovers to make fish tacos the next night.

I love many types of fish, but simple grilled salmon is by far my favorite.
