Finally Down the Beach and It’s Kenny Time!

Posted Jun 16 2012 8:55am

Goooood Morningg friends!

Happy weekend!!

Today is going to be a GREAT day. Do you want to know why?…

Well I’m going to tell you anyway ;)

Tonight is the KENNY CHESNEY concert in Philly!!! Woohooo :)

My family and I have been going together every year. We have an epic tailgate that starts around 11:30am before heading in to see the greatest concert of the summer year.

We look forward to this day all year – I’m so excited I can hardly contain myself ;)

Before I get carried away, let me tell you about my first day down the beach for the summer. We got down around 2pm yesterday and quickly ordered some sandwiches from the best sub place in town – Sack O’ Subs. I LOVE their tuna salad – its just so amazing – not the best for you, but once in a while won’t hurt ;)

I got it on a whole wheat wrap this time with lettuce, tomato, onion, and hot peppers – mmmmm :)

My mouth is watering …

Moving on …

After lunch we headed over to the marina to take the boat out – probably the highlight of the day ;)

Although I didn’t get to wakeboard, it was nice to finally be out on the water for a joyride!

Isn’t she pretty ?! .. I think so ;)

Since I’m the captains helper, I tied up the boat as we came in to dock – it was VERY windy so it was a tad difficult to park – I have proof with a wonderful bruised lump on my shin

That’s definitely an attractive bruise. (hard to see it b/c I wanted to give you the perspective of the bump ;) )

While Mitch cleaned up the boat, Mom and I headed to the store to pick up a few things for dinner and the tailgate tomorrow. Before we headed to the boat, I walked next door (from our house) to the little seafood place (Mike’s Seafood) and picked up awesome salmon for our main dish.

We ordered amazing crab cocktail claws from Mike’s and munched on them while dinner cooked up. I decided to make it with a citrus sauce and a veggie quinoa mix and steamed broccoli on the side – it was delicious

The salmon and quinoa turned out REALLY good – so good that you can be expecting recipes next week for them ;)

It’s time for me to get ready for the concert!! Can’t wait :)

Stay tuned for a recap of this epic concert!
