Hey, friends! How are ya? I’m pretty good but a little bummed out. My phone is letting me text everyone except Matty. This has been going on for almost a week now and it totally stinks! I feel disconnected from him enough as it is, with me being at school and him being at home, so not being able to chat with him all day is kind of torturous. I miss my man!
Okay, ranting session is over. Onto today’s workout!
Today was a doozy! I completed the Tone It Up Bikini Body MAX burn …and burn it did. For the cardio portion, I wheeled a spin bike into the exercise room and replaced riding with jogging, since I ran on the treadmill yesterday. I finished the workout in just over 45 minutes, so I decided to finish it off by adding 10 more burpees and a 2-minute cooldown on the spin bike. It felt great!
Bet you can guess what I had for breakfast.
The usual Vega chocolate protein pudding oats. Today’s fruit of choice was an orange. Check out my ghostly-looking I.D. in the background.
After class, I came back to my room to study for my exam tomorrow. An hour into it, I broke for a very yummy lunch, comprised of food I prepped this weekend to bring back to school with me.
Please ignore the fact that my sweet potato looks slightly diseased. I promise it was delicious and fresh! I also ate it cold because I was too lazy to go downstairs and microwave it. Still delicious! The gigantic salad included with kale, broccoli, carrots, smoked sun dried tomatoes (!!!), tempeh, Annie’s papaya poppyseed dressing and nutritional yeast.
If you haven’t tried smoked sun dried tomatoes, you must. My dad, being the angel that he is, bought some for me to try this weekend and I am head over heels in love with them. I’m thinking they would be a great addition to the smoky tofu scramble !
Tonight’s dinner was not the dining commons’ finest. After class, I went to the DC in hopes of getting another satisfying meal. The main entree was a fried tofu dish drenched in a super salty-looking sauce and served with white rice. They can’t all be winners, right? I debated going back to my room to prep dinner but since I was already there, fixed myself a plate.
I opted for a salad with a bunch of veggies, roasted brown sugar-glazed carrots, sunflower seeds and Italian dressing. I also had a small bowl of butternut squash soup (homemade and yummy!) and a few Tofurky slices. The Tofurky was the only other available protein source for dinner. I wasn’t really amped about it but sometimes, you have to just roll with the punches!

The foodie penpal who sent me some goodies was reader Karli (hey girl!). She packed a fantastic box of lovely items for me, complete with a self-written note. I loved that personal touch!

Well, well, well, Karli! Do you know me or what?! That quinoa is wonderful! I used some of it this weekend, in fact.
I’ve seen these chips around but have never felt particularly compelled to purchase them. Turns out I should have felt compelled because these are fantastic! They have an incredible salty bite, which speaks to my inclination for salty foods, and are delicious with guacamole!
In case you haven’t figured it out already, I’m not into granola. It doesn’t really satisfy me and is often loaded with sugar. Plus, it isn’t very nutrient dense for its caloric value. Well, this granola proved me wrong. It is SO yummy. I sprinkled some on top of organic soy yogurt and tossed a few sliced strawberries into the mix for a home run snack. Love!
These Trader Joe’s fruit leathers are not only adorable but great pre-workout fuel! I noshed on one before an A.M. workout and it worked like a charm. However, I wasn’t running, so I would be interested to see how it would affect me for a run. I usually can’t stomach foods pre-workout but maybe I’ll give it a go soon!
To be honest, I haven’t tried the amino energy gels. They are blue raspberry flavored, which is not one my favorite flavors, and I also tend to steer away from heavily processed/artificial products. I would rather obtain my esential aminos from whole foods like quinoa, chia seeds, hemp seeds or combined plant-based proteins. That being said, I totally appreciate the thought, Karli! You’re wonderful and I’m so happy we’ve gotten to know each other.
Overall, this basket was pretty amazing! I am so grateful to Lindsay for hosting the Foodie Penpals program and so grateful to Karli for sending me such a great basket!
