EYWIP Week 5-Coconut Milk Yogurt & Granola

How did last week go with the reduction in dairy? Was it as hard as you thought? Did you make my coffee creamer ? I found some grass-fed whole milk yogurt at Wegman’s last week. I got so excited that I had to buy it! I tried giving it to my daughter because I know how much she loves yogurt, but her skin broke out again with a rash on her cheeks and the backs of her arms that looks like keratosis pilaris . I know that some times kids can outgrow intolerances and usually high quality dairy is easier to digest than the low-fat highly processed alternative. But unfortunately this is not the case in our situation.

This weekend I am planning to make a big batc fitmomsfullplates-granola h of my coconut milk yogurt . I have a Yogotherm yogurt machine, which is really just a plastic container nestled in a Styrofoam shell. It doesn’t use any electricity; it just sits on my counter and makes the best tasting yogurt. In my coconut milk yogurt recipe I also show you 2 ways to make it without a machine: the water bath and oven method. I think the yogurt tastes great. I have Glad Take & Toss 4 ounce containers and use them for taking it to work. Because the yogurt is made with coconut milk and not cow’s milk, it’s a great source of healthy fat (specifically medium chain triglycerides) but not protein. Add some protein on the side (like some deli rolls) to make a complete meal/snack.
