So I’ve been doing pretty good on my January Challenge . Limiting drinks, getting good workouts in…but I’ve still been less than stellar on the food front. While my sugar intake has been way less than it was during the holidays I’m still not perfect. And my chip/cracker consumption seems to have taken up some of the slack. Every day for the past couple days I kept telling myself “today’s the day I pull it together.” And then somehow I fall back into bad habits. Well today, all of that changed. Today I can say I had a truly excellent day of eating. Which is a good thing because I’ll be in Maui in a bikini in a month!
But before we get into the details, please checkout the beautiful sunrise that greeted me when I was taking Chance out to the bathroom this morning.
For breakfast I had 3 egg cups . Plus a couple of grapes.
Lunch was a little quinoa turkey concoction (ground turkey seasoned with garlic and cayenne), quinoa, orange peppers and Laughing Cow Light chipotle cheese.
My post-workout snack was a few slices of applewood chicken breast slices and some cashews.
And dinner was this little random mixture of a roasted sweet potato, spinach, shredded chicken, corn, a few goat cheese crumbles, greek yogurt (in place of sour cream) and a light drizzle of BBQ sauce. Plus a few grapes afterward for dessert.
My workout was also something to write home about. I did 30 minutes on the step mill, 30 minutes of weights (assisted pull-ups/dips, squats, step-ups – front, back, side, box jumps, low row, leg press, lat pull-downs) and finished it off with 10 minutes on the rowing machine and 5 on the elliptical.
And now, instead of eating cookies or chips I’m drinking tea and watching New Girl. Cross your fingers I can make it into bed without stopping off in the kitchen.
