Embracing Rest from Running, Green Oats Behind the Scenes and Light Lime Daiquiris

I must admit… I have been SUPER cranky and irritable over the past couple weeks because I haven’t been able to run . LOOK OUT!!!! I kinda feel like I am going to explode with all this pent up energy! As I have said before, running is not only a sport I do for fun and exercise but it is also for maintaining my sanity stress relief. As I get farther into training, the fire within me to run grows stronger. No other exercise does for me what running does. (Don’t run too far with that one guys ;)) Running makes me feel strong, fit, healthy and happy and it’s addictive. Maybe that sounds crazy (Andrew thinks I’m crazy) but it is totally addictive. Maybe it’s because I never in a million years though I would be able to run more than a mile without walking and now I can run 8 miles no problem. Crazy. I believe it is a testament to the fact that we are capable of doing so much more than perhaps we ever thought. I am having a difficult time wrapping my crazy head around the fact that I HAVE to stay off my leg for it to get better. I am not Wonder Woman and this is the ONLY body I have. My perspective is slowly switching over to accepting and embracing rest and recovery so that I will be able to run for years to come! No MRI yet… still waiting for that to be scheduled to determine if I have a stress fracture or not.
In the meantime, I guess I will just overindulge in other things that bring a smile to my face like singing, green oatmeal and cocktails! Pretty sweet combo, right? If I can’t run I’m gonna bust out singing some Richard Strauss at 6:45 in the morning in my car followed by the most amazing batch of green oats yet. TWO things that will draw lots of attention . Guaranteed. PERFECT way to start the busiest day of the year at work (Though I have still somehow found the time to blog. Typical.)
How about some racy behind the scenes action? Here is how these oats really come to life…
Green, but beautiful, right? These oats are PACKED with good stuff. I give the recipe all the time… but here it is again… in the future I will link it to my recipe page which is still in the works!
Beautiful Green Oats
- 1/3 cup old fashioned rolled oats
- 1/3 cup unsweetened coconut milk
- 4-5 chopped ripe strawberries
- 1 small chopped ripe banana
- 1 Scoop Trader Joe’s berry flavored greens powder (or YOUR favorite greens powder)
- 1 scoop vanilla whey protein powder
- Pinch of salt
Stir it up! Store in the fridge in a bowl or in a nearly empty nut butter jar until the next morning. If you stored it in a bowl, enjoy it right away the next morning, pour in a nearly empty nut butter jar, or fancy it up with delicious garnishes such as nuts, berries, seeds, granola, whatever you like! I was simply craving walnuts this morning :)
And now for the good stuff. You all know that cocktails can be loaded with calories. Duh. I have been making these light lime daiquiris for ages and no one ever knows they are ‘light’. I promise, they are pretty freakn’ awesome and very very easy to make!
Easy Light Lime Frozen Daiquiris
- 8-10 ice cubes
- 3-4 packets of Truvia or other all-natural no calorie sweetener
- 2 Shots of clear rum. I LOVE Don Q because for the price you can beat it.
- 1 shot of lime juice (or more or less according to your tastes.) I like my drinks TART.
Blend!!! Add more ice if you need to in order to get that super thick, slushy texture.

I just figured out that for some reason my work computer thinks it is BRITISH. Yep. Most everything I write is spelled WRONG according to my British computer. That is why you will often find words on this blog spelled 'colour' and 'flavour' rather than 'color' and 'flavor'. I kinda like it that way…
I must start wearing my retainer more often like a BOSS. This smile cost a lot of $$$ and my teeth start to move back every day that I don't wear it!
I have a Wine Tour event to attend after work and then I am in need of some very serious SLEEP.
