Egg-less, Milk-less, baking soda-less Pancakes

How does one make pancakes with out the ingredients listed above? The answer is… one doesn’t :P  So last night (after my snack of popcorn with Texas Pete… judge me if you will), I realized I didn’t have any yogurt in the house.  Being that yogurt is an essential ingredient in overnight oats, I had to, yet again, pass on making them.  Although with the mixed reviews I’ve been hearing about them, I’m not sure I want to try them…. but I will! Oneday…

Anyways, without overnight oats, I woke up deciding that pancakes would be a wonderful breakfast! I was so excited to top them with the fat, juicy blackberries I bought yesterday and drizzle them with maple syrup.  I got out the griddle, 2 mixing bowls, and then went to grab the ingredients.  However, I quickly realized I was mixing 1/2 of the essential ingredients, making it pretty tough to make pancakes. Boo.

No overnight oats, no pancakes, no eggs… luckily Hubbs came to the rescue by suggesting we take this as a sign that we should have breakfast out.  It didn’t take me long to agree, and off the the Daily Grind we went!  Of course I forgot my camera (it’s really not my morning…), so I snapped one with my blackberry (so sorry for the pooooooor quality)

I ate: all the extra crispy hash browns (with ketchup), 1/2 the eggs (which equals 1 egg), 1 piece of Rye toast with jelly, I piece of orange garnish and 2 cups of Joe.  It was good.  Maybe I’ll have to “mess up” breakfast more often ;)

Question of the day: I almost camped out for the new iPhone (but decided sleep was more important).

Thursdays are Charlotte days, so that’s where I’ve been most of the day.  I decided to grab lunch somewhere I used to go all the time when my office was in South Park:

I love their salad bar and was craving some veggies!

Buffets or salad bars, I always end up with 1 or 2 bites of everything!  In this mix I have a mini salad with balsamic, pasta salad with spinach and red peppers, wheatberry salad (my favorite texture in the world!), asian green beans with cashews, squash salad, and maybe a few more that I can’t remember :)  It fulfilled my veggie craving!

I decided to be creative with a drink, since I’m always a water girl.  After perusing their giant wall of drinks, I grabbed this:

Have you ever tried one of these? I hadn’t, but was intrigued by the organic, raw juice, with probiotics and no added sugars.  I grabbed it, saw some stuff floating in the bottom and decided to shake it up to “mix it back in”.  As I was checking out, the cashier informed me to be careful not to shake it, because it would explode on me.  Oops.  He laughed when he saw the look on my face and walked outside to open it for me.  A little fizz and pop, but nothing too bad.  The taste? Strong!  It tasted like real cranberry juice, not cranberry cocktail (AKA: pure sugar).  I liked it though! It certainly is a drink to sip and not chug.  Only 60 calories in the whole bottle! I only was able to drink 1/2.  Maybe I’ll have the other half later.

Earth Fare is right by South Park mall, so I thought it would be fun to run in and check out the new iPhone at the Apple store.  I didn’t expect them to have any left to sell, but at least I would be able to check it out… HA.  Evidently I wasn’t the only one with that idea:

This line came out the Apple store, wrapped around the corner, and went down a whole different corridor.   Craziness.  Especially because the line didn’t move the entire time I was there (which I guess wasn’t very long, but still… it didn’t move an inch)!

Glad I didn’t camp out in this craziness!! :P


Whew, I’m exhausted! Tonight I had girls night and hung out with a bunch of new girls that I was introduced to through a friend.  Everyone was so sweet! Brandy provided appetizers, but to make sure I didn’t show up hungry, I snacked on some berries and pasta before I left.

Yes, that’s cold cooked pasta dipped into cold marinara.  It actually was quite tasty :)  When I got to the house, I was greeted with a Firefly Vodka and Raspberry Iced Tea drink.  Yummy!!

She even had ice cubes with frozen raspberries inside- so cute! I had about 1.5 of these of the 4 hours… knowing Ihad to drive home kept me in check ;)

I probably had 10-15 pita chips and a lot of strawberries and raspberries!  Plus 2 cubes of pound cake (mmm!) and several strawberries dipped in…

Everything was so tasty and the girls were great!  But, as you can probably tell from my lack of description, I’m whipped.  To bed I go!! Night :)
