Edamame Corn Salad

I don’t know about you, but I can get so sick of eating the same veggies over and over. This salad was a nice change. I made this back a few weeks ago. It was really refreshing and it went perfectly with grilled chicken. And of course it is totally guilt free.

Edamame Corn Salad

(approx. 151 cals per serving)

Ingredients

16oz sweet corn

1/2 red bell pepper chopped

25 cherry tomatoes sliced

1/4 red onion diced

1 package edamame beans (shelled)

Ingredients for Dressing

1/4 tsp pepper

1/2 tsp salt

1 tsp garlic powder

2 tbsp balsamic vinegar

2 tbsp olive oil

Combine all of the salad ingredients together in a mixing bowl.  Whisk together all of the salad ingredients and pour on top of the salad. Mix well. Enjoy!
